Nacogdoches County residents Baker Denman and Ross Pantalion operated a grist mill at the Texas Folklife Festival, grinding corn as had been done for decades in East Texas communities. They shared memories as well as their milling skills, noting that community grist mill operators usually bartered their services. Corn meal was long a staple of the rural Texas diet and a main ingredient in such dishes as cornbread, cornbread dressing, grits and a tasty coating for fried fish, okra and green tomatoes.
