decades

East
Texas
communities
. They
shared
memories
as
well
as their
milling
skills
,
noting
that
community
grist
mill
operators
usually
bartered
their
services
.
Corn
meal
was
long
a
staple
of the
rural
Texas
diet
and a
main
ingredient
in
such
dishes
as
cornbread
,
cornbread
dressing
,
grits
and a
tasty
coating
for
fried
fish
,
okra
and
green
tomatoes
.
